Ingredients
For the pancakes
▶30g buckwheat flour
▶70g milk of your choice (I used soy milk)
▶10g agave syrup or honey
▶1 tsp baking powder
▶1/2 tsp vanilla
▶15g amaranth
For the ice cream
▶75g frozen raspberries
▶15g agave syrup or honey
▶40g yogurt (I used soy yogurt)
Topping
▶raspberries
▶1 banana
▶some agave syrup or honey
Mix all ingredients for the pancakes except amaranth. Combine with a handblender.
Add amaranth and mix again.
Fry pancakes in a pan on medium heat.
For the ice cream, blend all ingredients.
Cut banana into slices.
Put raspberries and banana slices between the pancakes and top everything with raspberry ice cream and agave syrup or honey.
